01. Preheat the oven to 200°C.
02. Spread the zucchinis, eggplants, peppers, onions and tomatoes in the 24 cm IronPot Master Swiss cast iron pan.
03. Drizzle with olive oil and sauté with chopped garlic, thyme, salt and pepper.
04. Bake for about 45 minutes, until the vegetables are soft and golden.
