Ingredients

2 sliced zucchinis
2 eggplants cut into slices
2 red peppers cut into strips
2 onions cut into half moons
4 ripe tomatoes cut into slices
3 chopped garlic cloves
2 tablespoons of olive oil
1 teaspoon fresh thyme
Salt and pepper to taste

Preparation

01.  Preheat the oven to 200°C.

02.  Spread the zucchinis, eggplants, peppers, onions and tomatoes in the 24 cm IronPot Master Swiss cast iron pan.

03.  Drizzle with olive oil and sauté with chopped garlic, thyme, salt and pepper.

04.  Bake for about 45 minutes, until the vegetables are soft and golden.

05.  Serve hot as a side dish or even as a main course.
