01. Preheat the oven to 180°C and grease a pie dish.
02. Peel, core, and thinly slice the apples, then toss them with lemon juice.
03. Line the pie dish with the pie crust and prick the bottom with a fork.
04. Mix the sugar and cinnamon, and sprinkle it over the crust.
05. In a bowl, beat the eggs and heavy cream, then pour it over the apples.
06. Bake for about 30-35 minutes or until golden and set.
