12 fresh sardines (with some scales and guts removed)
Coarse salt to taste
Mixed bread, breadcrumbs or slices of hard bread (to serve under the sardines)
Extra virgin olive oil to taste (optional)
1 lemon cut into wedges (optional)
Preparation
Rinse the sardines under cold water to remove any residue and dry them gently with kitchen paper. Keep the scales, they protect the fish from direct heat.
Place the sardines on a baking tray and sprinkle generously with coarse salt. Leave to rest for about 15 minutes.
Heat up the WonderGrill or light the charcoal. The advantage is that the WonderGrill doesn't have a direct flame so it won't burn the sardines.
Place the sardines on the hot WonderGrill, without turning them too often. Let them grill for 3 to 4 minutes on each side. When the skin starts to crackle, they're ready.
Serve on slices of rustic bread on the Acacia board, they will absorb the flavor of the fish and be delicious.
If you like, drizzle with a little olive oil and squeeze a little lemon over the top.
